Waipara Hills Pinot Noir, Central Otago
The Central Otago region, secluded in the middle of the southern end of the South Island, has over the last decade or so, become world famous for its Pinot Noir wines. Nearly all the fruit comes from the Golden Terraces Vineyard with 3% from the Woolshed Vineyard, harvested over a ten-day period. Gently de-stemmed, the grapes are cold soaked followed by a short ferment and pressing, the wine is matured in a mixture of tank and barrel for about nine months. Bramble fruit, cherry, spice and a hint of smoke on the nose, black cherry and plum on the palate supported by oak spice, soft tannins and a bright, refreshing finish.

This lovely red wine created by Waipara Hills is produced in Central Otago. Available in 75cl bottles, supplied by Accolade wines. Waipara Hills Pinot Noir is a delighful wine, made with Viosinho, Verdelho and Rabigato grapes. This screwcap wine is made with added-sulphites. Fresh, savoury, berry-fruit flavours that are excellent with light game, rich chicken and pork dishes.
A temperamental thin skinned grape and difficult to grow, when produced of any quality it demands high prices. The thin skin means it's very light in colour body and tannin, it characteristically has searing acidity and full lingering flavours of raspberry, strawberry, cherry, violets and sweet spice.
